This is my mother's recipe. Brushing a bit of milk over the top ensures you get a lovely brown crust.

  • 375g self-raising flour
  • 150g caster sugar
  • 50g butter
  • 300g raisins
  • 1 egg
  • 250ml milk
  • 1 tablespoon milk

  1. Preheat an oven to 190 C / Gas 5. Grease and flour a 23cm round baking dish.
  2. In a large bowl, rub together the self-rising flour, sugar and butter with a pastry cutter until the mixture resembles coarse crumbs. Stir in the raisins. In a separate bowl, whisk together egg with 250ml of milk. Lightly mix the milk mixture into the flour mixture until it holds together. Place dough in prepared baking dish, and brush top with 1 tablespoon of milk for a nice golden brown crust.
  3. Place the bread into the preheated oven. Reduce heat to 180 C / Gas 4, and bake for 1 hour. Let cool before serving.

I used half the amount of raisins and about 2/3 of the sugar and it came out really fine. Actually, 300g of raisins would, I believe, be too much. And it was fully baked after 40 minutes.-05 Mar 2016

I just pulled this out of the oven and tried a piece, and I really like it. It's slightly sweet and the crumb almost reminds me of cornbread. My husband just tried a bite and said, "Oh, that is good!" It doesn't matter to me if it's truly authentic or not, I just wanted something tasty to serve. I had to make this since my ancestors are from County Cork! It is awesome right out of the oven. No butter needed. I didn't have raisins, but I didn't miss them at all.-17 Mar 2010
